LOLLIPOP COOKIE VALENTINES

  • 12 craft sticks
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup butter, softened
  • 1/3 cup packed light brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 12 (1 ounce) squares white chocolate
  • 1 egg white
  • 1 1/4 cups confectioners' sugar
  • 3 drops red food coloring

  1. Soak craft sticks for one hour in a bowl of cold water.
  2. In small heavy saucepan over very low heat, stir chocolate chips until melted and smooth. Remove from heat; let cool.
  3. In large bowl with electric mixer at medium speed, beat butter, brown sugar and vanilla until fluffy. Beat egg in well; beat in cooled chocolate. With mixer at low speed, beat in flour, cocoa powder and salt until smooth. Divide dough in half.
  4. Preheat oven to 375 degrees F (190 degrees C) and grease 2 large cookie sheets.
  5. Roll each half out to 1/8 inch thickness between 2 sheets of wax paper; freeze, in wax paper, 5 minutes. Peal top sheets of wax paper off dough; cut dough out using 3-inch heart-shaped cutter. Reroll scraps; freeze again 5 minutes; cut out. Place half of the hearts 1 inch apart on prepared cookie sheet.
  6. Drain sticks, pat dry. Place one stick on each heart to make 2 1/2 inch handle, pressing lightly into dough. Place remaining hearts on top; press edges gently to seal. Bake about 12 minutes until firm to touch. Cool on wire racks.
  7. In 2-quart heavy saucepan over very low heat, or in top of double boiler set over barely simmering water, stir white or milk chocolate until melted and smooth; if using both chocolates, melt in separate 1-quart pans. Remove from heat.
  8. Holding each lollipop by handle, dip into chocolate to coat on both sides; let excess chocolate drip back into pan. Place each lollipop as it is coated on wax-paper-lined cookie sheet; refrigerate 20 minutes until chocolate is set.
  9. To Make Icing: In large bowl with electric mixer at high speed, beat egg white and confectioners' sugar until very smooth. If desired, remove small portion of icing to separate bowl; tint with drops of food coloring. Spoon icing into decorating bag fitted with small writing tip; pipe over lollipops in desired patterns. Decorate with assorted candies and decors; attaching with dots of icing.

Christmas Santa Crackers

These delicious appetizers may have you believing in Santa Claus all over again. Fun to make and even more fun to eat, these are a must-have addition to your table of goodies for filling family, friends and your Christmas guests with a heaping helping of ho-ho-holiday cheer!

Ingredients
  • Round Butter Crackers
  • Pepperoni Slices
  • Ricotta Cheese
  • Capers
  • Celery
Instructions
  1. Cut the pepperoni slices into triangles. Place the ricotta into a Ziploc® plastic bag, making sure the bag is securely closed. Cut a small hole in one corner of the plastic bag. Attach the pepperoni to the cracker with a dab of the ricotta.
  2. Pipe the ricotta along the bottom of the pepperoni "hat" and to form the beard. Use the ricotta to adhere the capers to the cracker for eyes.
  3. Slice the celery and adhere to the cracker for the moustache and a dab of ricotta for the nose.
  4. Store covered in the refrigerator.

Christmas Tree Cookies

Ingredients
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • Candy Coated Chocolate Filled Candies
Instructions
  1. Preheat oven to 375 degrees F. In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  2. In a large bowl, mix together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
  3. Bake 8 to 10 minutes, or until golden. As soon as you remove from oven, use chocolate candies to make a tree pattern on the cookie. Cool and enjoy!

Ingredients

  • 18 mini doughnuts
  • 1 cup (150g) icing sugar
  • 1/3 cup vanilla frosting
  • jelly beans, choc chips, lolly straps, to decorate

Method
  1. Dust doughnuts in icing sugar to create a frosted appearance.
  2. Thread three doughnuts onto each bamboo skewer.
  3. Use frosting to adhere choc chips for eyes, an orange jelly bean for a carrot, nose, and coloured jelly beans for buttons.
  4. Cut lolly straps into short strips. Tie around 'necks' to create scarves.

Rudolph pancakes

Ingredients
  • 1 cup (250ml) milk
  • 1 egg, lightly beaten
  • 1 cup (150g) self-raising flour
  • 2 tbsp butter
  • 4 rashers streaky bacon
  • 4 white marshmallows
  • 8 dark choc chips
  • 4 strawberries

Method

  1. Make a basic pancake batter by whisking together milk and egg in a large bowl. Sift over flour and whisk until smooth.
  2. Melt 2 teaspoons butter in a large frypan. Pour in batter to form one large circle, one smaller circle and two triangles for ears. Cook for a couple of minutes until bubbles form, flip and cook for a further minute until cooked through. Remove and keep warm. Repeat with remaining ingredients.
  3. Cut bacon rashers in half and cook until crisp. To arrange Rudolph, place the large pancake on a plate. Place smaller pancake on top. Position rashers for antlers and the triangular pancakes for ears. Decorate with marshmallow eyes and strawberry nose.
  4. Cut marshmallows in half. Press a choc chip into the centre of each half.

Christmas sandwiches

Ingredients

  • 4 slices fresh bread
  • 1 tsp peanut butter
  • 1/4 small banana, mashed
  • 1 tsp avocado
  • 1 tsp cream cheese
  • 1 tbsp grated apple
  • 2 slices cheddar or tasty cheese
  • You will also need:play dough or Christmas biscuit cutters

Method
  1. On one piece of bread spread the peanut butter, followed by the mashed banana. Press closed with a second piece of bread. Cut out sandwich shapes using a cookie cutter and arrange on a plate.
  2. On another piece of bread spread the avocado, cream cheese and grated apple. Press closed with a second piece of bread and again use cookie cutters to stamp out a shape. 
  3. Stamp out more Christmas shapes from slices of cheese, then scatter over sandwiches and serve.
